Quick and healthy Quinoa with Mushrooms and Feta makes a tasty and protein-packed lunch or dinner.

Ingredients
- 2 cups quinoa see note, cooked
- 8 oz shiitake mushrooms fresh
- 1 tbsp butter
- ½ cup feta cheese crumbled
- 1 tbsp thyme leaves
Instructions
- Wash the mushrooms, discard the stems and cut the tops into large pieces.
- Melt butter in a large skillet over medium high heat, and fry the mushrooms for about 4-5 minutes, until they start to brown.
- Add the quinoa, feta and thyme leaves and stir everything together. Taste for salt. (You may not need any because feta is fairly salty).

- Note: You'll have better results if you cook quinoa in vegetable or chicken broth. However, you may also boil it in slightly salted water. You need about ¾ cup of uncooked quinoa in this recipe.
