Radish, Avocado and Egg Mayonnaise Sandwich
Description
The Radish, Avocado and Egg Mayonnaise Sandwich starts by chopping hardboiled eggs. These are combined with Greek yogurt, mayonnaise, Dijon mustard, and salt to create a creamy base. Avocado cubes add a buttery texture and mild flavor, while thinly sliced radishes and spring onions bring crispness and slight sharpness. Toasted pumpkin seeds contribute a nutty crunch, complemented by fresh chopped coriander.
The mixture is seasoned and then generously spread on slices of wholemeal bread. Microgreens are layered on top before closing the sandwich, adding a delicate freshness. The creamy yet textured filling balances richness with bright notes from the radish and herbs, making it a satisfying vegetarian option.
