Ingredients
- 2 cups milk
- 1¾ cup flour
- 2 teaspoons salt
- 1 egg
- 2 lb potatoes , peeled and grated
- 16 oz. Bacon
- lingonberry jam
- butter (for cooking)
Equipment
- Baking dish
Instructions
- Whisk together the milk and flour in a bowl.
- Add the salt, eggs and potatoes. Mix well.
- Preheat the oven to a temperature of 210 F (100°C).
- Heat a small knob of butter in a pan and, most importantly, prepare one raggmunk at a time.
- Roll out ¼ of the mixture into a pancake and, using a spatula, even out the surface so that the grated potatoes are not in a pile.
- Fry over medium heat without burning for about 4 minutes per side until it has a nice golden color and a crisp edge.
- Gradually place the raggmunk in a large baking dish and keep them warm in the oven.
- In a skillet, heat the bacon over medium heat until crisp. Drain it.
- Serve the raggmunk hot with fried bacon and lingonberry jam.
