Rainbow Coconut Smoothie Bowls

Rainbow Coconut Smoothie Bowls blend coconut milk, frozen bananas, and coconut meat into a thick, creamy base topped with layers of colorful fresh fruits arranged as a rainbow. Hemp seeds and shredded unsweetened coconut add a mild nuttiness and subtle texture contrast. Drizzled with honey, these bowls are visually striking, with a balance of sweet tropical flavors and smooth, scoopable consistency perfect for breakfast or a snack.

Description

This recipe uses canned coconut milk, frozen bananas, and coconut meat blended with hemp seeds, shredded coconut, and honey to create a dense smoothie thick enough to be eaten with a spoon. Coconut milk is also frozen into ice cubes to chill the mixture without watering it down. Preparing the fruit in advance allows for precise layering atop the smoothie base to form a rainbow pattern using berries, stone fruits, kiwi, and other vibrant produce.

The smoothie bowl offers a cool, creamy texture with tropical flavors from the coconut and banana, sweetened lightly with honey. The hemp seeds and shredded coconut contribute gentle nuttiness and some texture variation. The fresh fruit topping brings brightness, natural sweetness, and visual appeal with a colorful spectrum.

Because it is served immediately after assembly, the bowl maintains firmness and freshness. This preparation suits those looking for a refreshing, nutrient-rich meal that combines tropical ingredients with fresh fruit in an engaging presentation.

Ingredients

Servings
  • 1 cup coconut milk canned
  • 2 banana frozen
  • 1/2 cup coconut milk ice cubes
  • 1/2 cup frozen, or fresh! coconut meat (I find frozen at whole foods)
  • 2 tablespoons hemp seed
  • 2 tablespoons shredded, unsweetened coconut
  • 1 teaspoon honey

for the rainbow fruit: for the rainbow fruit:

  • strawberry raspberries, pluots, red
  • peach mango, orange
  • banana pineapple, yellow
  • kiwi fresh mint, green
  • Blueberry blue
  • plum indigo, dark
  • blackberries black raspberries, violet:
  • coconut shredded, for topping

Instructions

  1. To make the coconut milk ice cubes, fill an ice cube mold with coconut milk! Freeze overnight. Slice and prep your fruit before you make the smoothie.
  2. Blend together the coconut milk, bananas, coconut milk ice cubes, coconut meat, hemp seeds, shredded coconut and honey. You want it to be thick so it can be scooped into a bowl, much like an acai bowl or banana “ice cream.” This works best with a high powered blender.
  3. Once the smoothie is in the bowl, layer on your fruit in the rainbow pattern. Cover with shredded coconut. Serve immediately!
