Rainbow mini bagel fruit bites are mini bagels smothered in a sweet, light and fluffy dip with layers of fresh fruit. These delicious bites make an easy and yummy snack or lunchbox option.

Ingredients
- 4 mini bagels
- 8 oz cream cheese
- 7 oz marshmallow creme jarred
- 4 strawberries finely chopped
- ½ orange finely chopped
- 1 handful green grapes finely chopped
- ¼ cup blueberries
- 8 mini marshmallows
- vanilla yogurt optional for lunchbox, and sprinkles
- crackers optional for lunchbox, preferred
Instructions
- Mix together softened cream cheese and marshmallow cream with a hand mixer until smooth and well combined.
- Toast bagels and cut each half in half to form 8 crescents.
- Cut strawberries, oranges and green grapes into small bite size pieces.
- Smear a layer of the cream cheese mixture on each bagel followed by a layer of strawberries at the top, then oranges followed by the green grapes. Place 2-3 blueberries at the bottom.
- Using a tooth pick cut in half, attach two mini marshmallows on either side to form the clouds of the rainbow.
- Serve with sprinkled vanilla yogurt and preferred crackers for complete lunchbox, optional.
