  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon cinnamon
  • ¾ cup raisins
  • ¼ cup shortening
  • ¼ cup brown sugar
  • ¼ cup granulated sugar
  • ¼ cup molasses
  • 2 egg
  • 1 ½ cups wheat bran
  • 1 cup milk

Instructions

  1. Preheat oven to 400°F. Line 12 muffin cups with papers or grease well.
  2. Combine flour, baking powder, baking soda, salt, cinnamon and raisins in a bowl, mix well and set aside.
  3. Combine shortening and sugars with a hand mixer on medium until fluffy. Add molasses and eggs and beat until incorporated.
  4. Stir in milk and bran. Add dry ingredients and mix just until moistened.
  5. Divide over prepared pans and bake 18-20 minutes.
