Raisin Sauce for Ham
Description
Raisin Sauce for Ham uses a mix of water, brown sugar, and apple cider vinegar as a base, thickened with cornstarch and infused with whole cloves during simmering. Adding raisins and orange zest introduces chewy texture and citrus brightness. The final step of stirring in butter smooths and enriches the sauce, which is then seasoned with a pinch of salt. The sauce's sweet, tangy, and aromatic profile pairs well when spooned warm over ham, providing a contrast to the meat’s savory richness.
The cloves add a gentle depth without overpowering, while the raisins provide bursts of sweetness. The sauce's consistency is slightly thickened but pourable, suitable as a glaze or accompaniment.
This sauce can also serve as a topping for pound cake or ice cream, offering versatility beyond ham. Optional additions like dry mustard or spirits could alter the flavor but are not necessary for the core recipe.
Ingredients
- 1 cup water + 3 tablespoons, cold
- ½ cup brown sugar
- 1 tablespoon cornstarch
- 1 tablespoon apple cider vinegar
- 4 clove whole
- ¾ cup raisins
- 1 teaspoon orange zest
- 1 tablespoon butter salted
- pinch salt
Instructions
- Combine water, brown sugar, cornstarch, vinegar, and cloves in a small saucepan. Bring to a boil over medium high heat while whisking.
- Add raisins and orange zest, reduce heat to a simmer (medium low) and let cook 5 minutes.
- Remove from the heat and stir in butter and salt. Remove and discard cloves.
- Serve warm over ham.
Notes
- Dry mustard can be added for a subtle spicy kick to the sauce.
- A splash of rum, brandy, or whiskey can be included to enrich flavor.
- The sauce is traditionally served warm over ham but can also be served over pound cake or ice cream.
