Ranch Potato Salad
Description
This salad starts by boiling salted baby potatoes until they are just tender. While still warm, they are cut into halves or quarters and tossed gently with a few tablespoons of ranch dressing and salt, then covered and refrigerated to chill. Once cooled, more ranch dressing is added along with sliced spring onions, cooked and crumbled bacon, and chopped chives. Freshly cracked black pepper is sprinkled for a slight bite.
The dressing coats the potatoes smoothly, providing a creamy, herbed flavor balanced by the smoky bacon and sharp green onions. Chilling allows flavors to develop and textures to firm. This salad can be served immediately after mixing or kept refrigerated until ready to serve. Additional dressing can be added right before serving to refresh the coating if needed.
Ingredients
- 1 1/2 lb potato baby or new
- salt
- 1/2 cup ranch dressing get recipe here, use more or less to taste
- 1 bunch spring onions sliced (about 6
- 6 lices Bacon cooked and crumbled
- 3 Tbsp chives snipped
- black pepper fresh cracked
Instructions
- Cook your potatoes in plenty of salted water until just tender.
- Drain and, while they are still hot, cut them in half or quarters, depending on their size.
- Put the hot potatoes in a bowl and toss gently with a few tablespoons of the ranch dressing and a pinch of salt. Cover the bowl with a clean cloth napkin, and then wrap in plastic wrap. Refrigerate until chilled.
- When the potatoes have chilled, toss with more ranch dressing and the green onions, bacon, and chives. Note: be generous with the dressing.
- You can serve immediately, or put back in the refrigerator until ready to serve. Give everything a final toss before serving, and garnish with more bacon, and black pepper if you like. Note: toss with more dressing before serving if needed.
