Ingredients
The Waffles
- ½ cup almond flour
- 2 tablespoons flaxseed meal
- ⅓ cup coconut milk
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 2 large eggs
- 2 tablespoons Swerve
- 7 drops liquid stevia
The Filling
- ½ cup raspberries
- zest of ½ lemon
- 1 tablespoon lemon juice
- 2 tablespoons butter
- 1 tablespoon Swerve
- 3 ounces double cream brie
Instructions
- Mix together all waffle ingredients and then cook on a waffle iron. While warm, lay slices of brie across waffles.
- In a pan, heat butter and swerve. Once browning, add raspberries and lemon juice/zest. Let this cook until bubbling and jam-like.
- Place waffle sides with brie under a broiler until brie is soft and waffle is slightly crisp.
- Assemble waffle with brie and raspberry compote. "Grill" in a pan over medium heat for 1-2 minutes per side.
