Description
This Raspberry Soda recipe starts with a syrup created by gently boiling raspberries, sugar, water, and vanilla extract until the fruit breaks down and the mixture thickens slightly. Straining removes seeds, leaving a smooth, flavorful syrup stored in the fridge for up to two weeks. When serving, raspberry syrup is poured over ice and topped with club soda for effervescence and dilution to taste.
The resulting soda is fruit-forward and refreshing, with a balance of sweetness and brightness from the raspberry and vanilla flavors. Ingredients
For the raspberry syrup
- 1 ½ cups raspberry fresh or frozen
- 1 cup granulated sugar white, 200g
- ¾ cup water
- 1 teaspoon vanilla extract
To serve
- club soda soda water
Instructions
First, make the Raspberry Drink Syrup:
- Add all ingredients to a pot. Stir it together, bring to the boil, then reduce the heat and simmer for 10 minutes, until the raspberries break down.
- Place a fine mesh strainer over a bowl or jug and pour in the mixture. Press the raspberries into the strainer to extract as much raspberry syrup as possible.
- Allow the mixture to cool, then pour into a jar or bottle and keep in the fridge for up to 2 weeks.
To serve:
- Fill a glass with ice and add 2 tablespoons of raspberry syrup, or more or less to taste (amount will depend on the size of your glass).
- Top up with club soda and add a few fresh raspberries.
