Raw Broccoli Salad
Description
The Raw Broccoli Salad features fresh broccoli florets complemented by sliced red onion and salted cashews for crunch. Golden raisins add a subtle sweetness, while toasted sesame seeds introduce a nutty note. The dressing is a blend of mayonnaise, seasoned rice vinegar, ground ginger, coriander, and white pepper, which coats the ingredients thoroughly for a creamy, tangy flavor. The salad is assembled by mixing the florets, onion, raisins, and cashews before adding the mayo dressing and chilling for at least an hour to develop flavor.
The salad's texture balances fresh crispness with creamy, slightly spicy notes from the dressing, making it distinct among broccoli salads. It can be served chilled as a side dish at gatherings or as a refreshing complement to heavier main courses. Preparing the ingredients separately and combining them shortly before serving helps preserve crunch and freshness.
Using fresh broccoli is important for the best texture and flavor. The recipe allows for substitutions like sweet yellow onion instead of red, or almonds and walnuts instead of cashews, though cashews are preferred. Raisins can be swapped for regular raisins or omitted depending on preference. Chilling the salad gives the dressing time to infuse the ingredients without losing the broccoli's crisp texture.
