Description
Starting with medium-sized sweet potatoes, the fries are cut into even fingers and soaked in ice-cold water for 45 minutes to draw out starch and improve crispness. After drying thoroughly, they are dusted with corn starch and tossed with chili powder, garlic powder, fine sea salt, and canola or similar oil for coating. The fries are arranged in a single layer on a greased baking tray to allow uniform air circulation.
Baking at 400°F, flipping halfway through, ensures that the fries develop a crispy exterior with a tender interior. After baking, the oven door is propped open to allow the fries to crisp further as they cool. Avoiding olive oil prevents early smoking, and adding salt only after baking preserves texture. Ingredients
- 3 sweet potatoes medium sized
- 3 tablespoon corn starch or arrow root powder
- 3 tablespoon chili powder
- 2 teaspoon garlic powder
- ¼ cup canola oil or ghee or grape seed oil

Instructions
- Scrub sweet potatoes with a brush to remove any dirt. Wash well and pat dry. We left the skin on sweet potatoes, but you can peel the skin off if you like it that way. Cut them into ½ inch thick about 3 inch long or 6 inch long fingers.
- Soak in ice-cold water for about 45 minutes. This removes excess starch from sweet potatoes. Then drain water, and pat dry completely.
- Sprinkle corn starch or arrowroot powder. Coat well and evenly. Shake off any excess cornstarch coating on the fries.
- Add the rest of the ingredients - chili powder, garlic powder, salt and oil. Mix.
- Arrange fries on a greased baking tray in a single layer.
- Bake in preheated oven at 400 F for about 15 minutes. Remove the tray from the oven. Flip all fries once. Rotate the baking tray(for even cooking) place it back into the oven and continue to bake for another 25 minutes.
- Once baking time is done, do not remove the fries immediately from the oven. Prop the oven door half open and leave the fries inside the oven for about 10 minutes. As fries cool, they turn ultra crispy!
- Transfer the fries to a large bowl and toss them with a fat pinch of sea salt.
- Serve baked potato fries with a dip of your choice.
