  • 8 oz button mushrooms
  • 8 fl oz chicken stock
  • 8 fl oz whipping cream
  • 2 tbsp butter
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Clean mushrooms using a mushroom brush. Slice them into thin slices.
  2. Melt butter in a pot over a low to medium heat. Once melted add the mushrooms.
  3. Allow the juice from the mushrooms to evaporate, then add in salt and pepper.
  4. Pour in chicken stock and allow the liquid to reduce.
  5. Continue reducing the liquid until there is enough in the pot to prevent the mushrooms from sticking.
  6. Pour in the whipping cream and reduce. Make sure heat is on low. Continue to reduce the quantity of the sauce for about 5 minutes.
  7. Serve warm. Spoon onto food, rather than pour.
