Red Eye Gravy with Quail
Description
This red eye gravy recipe combines diced fatty country ham cooked to render its fat and crispiness, forming a flavorful base. Sautéed onion, garlic, and chile add aromatic depth and subtle heat. Flour cooks into the mixture to create a light thickening effect, while fresh sage introduces herbal brightness. Gradually adding black coffee and chicken broth infuses the sauce with characteristic bitterness and savory elements, balanced by a touch of sorghum syrup sweetness. Simmering reduces the gravy to a smooth consistency similar to melted ice cream.
The finished gravy suits quail well by imparting rich, smoky, and slightly bitter flavors that complement the bird’s tender texture. It can be spooned straight onto the bird or used with other pork or poultry dishes. The reserved crispy ham pieces make a crunchy garnish to enhance texture.
Ingredients
- 1/4 pound country ham finely diced, fatty
- 1 onion minced, or shallot; 1/4 cup
- 1 clove garlic minced
- 1 small hot chile or 1/4 tsp cayenne, Thai or other; minced
- 1 teaspoon sage minced, fresh
- 1 tablespoon flour
- 2/3 cup black coffee 2/3
- 2/3 cup chicken broth or other broth
- 1 teaspoon sorghum syrup see above, or other sweetener
- salt to taste
- black pepper to taste
Instructions
- Cook the minced ham in a pan over medium heat until the ham is crispy and most of the fat has rendered. Remove about 3/4 of the ham and set aside.
- Add the minced shallot, garlic and chile and cook, stirring often, until translucent, about 2 minutes. Add the flour and mix well. Cook this, again stirring often, for 5 minutes.
- Add the minced sage and stir well. Add the coffee and broth, little by little, stirring constantly to incorporate it. Bring this to a gentle simmer. Add the sorghum syrup and mix well. Allow this to cook until the gravy has the consistency of melted ice cream. Add salt and black pepper to taste.
- If you want, pour everything into a blender and puree. As for the remaining ham, I like to sprinkle that over whatever I am eating the gravy with.
