Red Robin Pickle Nickels

Red Robin Pickle Nickels are crispy, golden-fried pickle chips coated in a seasoned fish fry breading. The coating's three-step process of flour, buttermilk, and fish fry mix ensures a crunchy texture that holds onto the tangy dill pickle slices. These pickles are fried briefly until the coating darkens slightly, producing a snack with a crisp exterior and juicy interior.

Description

The Red Robin Pickle Nickels recipe uses dill pickle chips as its base, which are first drained and then breaded in a flour and seasoning mixture, dipped in buttermilk, and finally coated with a Louisiana-style fish fry mix. This breading method creates a substantial, crispy outer layer that contrasts well with the acidic, moist pickles inside. The pickles are fried in vegetable oil at 350 degrees Fahrenheit for just over a minute to get a crunchy, browned crust without overcooking the pickle. Draining the fried pickles on a wire rack after frying helps maintain their crispness. This preparation results in a salty and tangy appetizer or side with a satisfying crunch and bite-sized ease for sharing or snacking.

Ingredients

Servings
  • 16 ounces dill pickles chips
  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon black pepper ground
  • 1 cup buttermilk
  • 1 package fish fry breading mix 8 ounces, Louisiana style
  • vegetable oil for frying

Instructions

  1. Drain pickles.
  2. Set up a breading station with 3 shallow containers.
  3. To the first container, add the flour, salt, and pepper. Stir to combine all ingredients together.
  4. In the second container, add the buttermilk.
  5. In the third container add the fish fry mix.
  6. Heat oil to 350 degrees. You will need to add enough oil to cover the bottom of the pot or cooking vessel to a depth of 3 inches.
  7. First bread the drained pickle chips with flour, then, shake off excess flour and lay on a wire rack.
  8. Quickly dip the pickles in buttermilk.
  9. Dip the pickles in the fish fry mix. After they have been coated with the fish fry mix, shake off the excess fish fry mix,
  10. Place the breaded pickle chips on a wire rack for 2 minutes before cooking. This will help keep the coating on the pickle.
  11. Fry pickles for about 1 to 1½ minutes in the hot oil. Remove when they start to turn a darker color.
  12. Drain the fried pickles on a wire rack.
