Red Skin Mashed Potatoes Recipe

These Red Skin Mashed Potatoes are fluffy, creamy, and sure to be a favorite whether you're serving them with dinner for your family or at a holiday gathering!

Ingredients

  • 2 1/2 lbs. potato red
  • 6 Tbsp butter
  • 2/3 cup half and half
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • chives optional garnish, chopped

Instructions

  1. Scrub potatoes clean and cut into 1 to 1 ½ inch chunks.
  2. Add the potato chunks to a pot and cover them with water. Bring the pot to a boil and then reduce the heat to a simmer and cook for 15-20 minutes until fork tender. Then drain the water and return to the pot or any bowl you prefer for mashing.
  3. In a medium bowl add the half and half and butter and microwave together until everything has melted. Stir to combine.
  4. Next, mash the potatoes with a potato masher while adding in the butter mixture and mash to your preferred consistency.
  5. Then add in the salt, black pepper, and garlic powder, and stir to combine.
  6. Garnish the top with chives, serve and enjoy!

Notes

  • Scrub your potatoes! Make sure you have cleaned all the dirt off the outside before cooking.
  • You can store these potatoes in an airtight container in your refrigerator for 3-4 days.
  • To reheat these potatoes you can do so in the microwave until everything has warmed through.
