Red Snapper with Lemon Caper Butter Sauce

This super tender and flaky Red Snapper with Lemon Caper Butter Sauce is a healthy and delicious meal that's ready in just 15 minutes!

Ingredients
- 24 ounces fresh red snapper 6 pieces
- Juice and zest of 2 lemons
- 4 cloves garlic minced
- 3 tablespoons capers
- ¼ cup chicken broth
- ¼ cup white wine
- ¼ cup butter divided
- 1 tablespoon olive oil
- 1 tablespoon fresh parsley chopped
- salt and pepper to taste
Instructions
- Heat large skillet to medium and add in the olive oil and 1 tablespoon of the butter. Once melted, add in the red snapper, skin side up. Add salt and pepper and sauté for a few minutes on each side.
- Remove the snapper and set aside.
- Add in the garlic and sauté for about 20 seconds, then add in the wine to deglaze the pan. Allow it to reduce slightly, then pour in the chicken broth, remaining butter, capers, lemon juice and zest.
- Simmer for a few minutes, until slightly thickened, then add in the parsley.
- Add the snapper back in just until heated through and reaches an internal temperature of at least 145°F when checked with a thermometer.
- Serve with the sauce over the top, a garnish of parsley and slices of lemon.
Notes
- If you don't have access to red snapper, you can use mahi mahi, cod, salmon, grouper or any other fish that you like. You can even make this recipe using scallops or shrimp if you'd like.
- The white wine I used is Pinot Grigio, but you can use any white wine you like or substitute with chicken broth instead.
