Red Velvet Sweet Rolls

Red Velvet Sweet Rolls are yeast-raised dough rolls incorporating cocoa powder and red gel coloring, filled with a cinnamon and nutmeg spiced butter mixture. Baked until golden, they offer soft, slightly chocolate-tinged, tender rolls with sweet spiced filling. A simple powdered sugar glaze finishes the rolls with a creamy sweetness.

Description

The dough combines milk, butter, sugar, yeast, an egg, flour, unsweetened cocoa powder, salt, chocolate chips, and red food coloring to create a softly colored and flavored yeast dough. After mixing and kneading until elastic, the dough is rolled out flat. A spiced butter mixture of butter, sugar, cinnamon, and nutmeg is spread evenly over the dough, leaving a border around the edges.

The dough is rolled tightly into a log, pinched to seal the seam, and cut into slices to form individual rolls. These are arranged in a baking dish and baked until puffy and set. Once cooled, a glaze of powdered sugar, milk, and vanilla is drizzled or spread over the rolls for added sweetness and moisture.

Red Velvet Sweet Rolls offer a tender crumb with a subtle cocoa flavor enhanced by warm cinnamon and nutmeg filling. The red color adds visual interest without overpowering the flavor. These rolls can be enjoyed as a breakfast pastry or a sweet snack, especially around holidays or special occasions.

If a stand mixer is unavailable, dough can be kneaded by hand after mixing ingredients.Additional red gel food coloring can be added to deepen the red hue if desired.Cream cheese icing can be used as an alternative glaze for a richer topping.

Ingredients

Servings

Dough

  • 1 ½ cups milk 2%
  • ¼ cup butter unsalted
  • ½ cup granulated sugar
  • 1 ¼ teaspoon instant yeast
  • 1 large egg beaten
  • 3 ¾ cups all-purpose flour
  • 5 teaspoons cocoa powder unsweetened
  • 1 ¼ teaspoon salt
  • ¼ cup chocolate chips
  • 3 drops red gel food coloring plus more as needed

Filling

  • ½ cup butter at room temperature, unsalted
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

Glaze

  • 1 cup powdered sugar
  • 2 tablespoons milk plus more as needed, 2%
  • 1 teaspoon vanilla extract

Instructions

  1. Line a pie plate or baking dish with parchment paper and spray with non-stick cooking spray. Set aside.
  2. To the bowl of a stand mixer, add the milk, butter, sugar, yeast, egg, flour, cocoa powder, salt, chocolate chips, and food coloring. Attach the dough hook and mix for 5-6 minutes until the dough is smooth and elastic. If you want a more intense red color, add a few more drops of food coloring as the dough comes together. (If the dough is too sticky, add more flour 1 tablespoon at a time.)
  3. Turn the dough out onto a floured surface. Roll it out into a rectangle about 12 x 18 inches.
  4. In a medium bowl, mix together the softened butter, sugar, cinnamon, and nutmeg until combined into a paste. Spread the paste over the dough, leaving a 1-inch border all the way around the edge.
  5. Starting on one of the long edges, roll the dough up into a log as tightly as possible. Pinch the long seam together. Cut the dough log into 12 even slices. (Sometimes, I get up to 15 rolls.)
  6. Place the rolls into the prepared pan with the cut sides facing up. They will be nestled close together. Let them rest for 40 minutes to allow the dough to rise.
  7. Preheat the oven to 350 degrees F. Bake the rolls for 25 to 30 minutes or until the tops just begin to brown.
  8. Remove from the oven and allow to cool on a wire rack while you make the glaze.
  9. In a medium mixing bowl, whisk together the powdered sugar, milk, and vanilla until smooth. Drizzle the glaze over the sweet rolls. Serve warm.

Notes

  • Mix dough by hand and knead for 4–6 minutes if a stand mixer is not available.
  • Add extra drops of red gel food coloring gradually to intensify the dough's red color to your preference.
  • Cream cheese icing can be substituted for powdered sugar glaze as topping.
