Description
This recipe starts by gently sautéing finely minced shallots in butter to bring out sweetness and aroma. Flour is added to form a roux and browned slightly over several minutes to develop a nutty flavor base. Red wine is whisked in gradually, blending into a smooth sauce before adding stock and seasoning with salt, black pepper, and fresh thyme sprigs. The mixture is brought to a low boil, then simmered for 15 minutes to reduce and concentrate flavors. Running the sauce through a fine mesh sieve removes solids for a velvety texture. If the sauce is too thin, a cornstarch slurry can be whisked in to thicken it to desired consistency. Ingredients
- 3/4 cup shallot finely minced
- 4 tablespoon butter
- 1/3 cup flour
- 2 cups red wine dry
- 2 cups stock see note

Instructions
- In a medium saucepan, melt butter and add minced shallots. Saute until soft.
- Add flour and stir into a paste (roux). Brown, stirring for 5 minutes.
- Whisk in red wine until smooth. Add remaining ingredients, stir and bring to a low boil.
- When boiling, reduce to a light simmer for 15 minutes.
- Run through a fine mesh sieve and return to saucepan. If needed, spoon out a small amount of gravy and mix with 1-2 tablespoons cornstarch. Whisk back into the saucepan and whisk until desired thickness. Correct seasoning, if needed and serve!
