Red Wine Gravy Recipe

Red Wine Gravy is a savory sauce made by browning a flour and butter roux with sautéed shallots, then whisking in dry red wine and stock, simmered to deepen flavor and thicken. The gravy is seasoned with salt, pepper, and herbs such as thyme, and finished by straining for smoothness. Cornstarch can be added for adjusting thickness. It pairs well with roasted meats.

Description

This recipe starts by gently sautéing finely minced shallots in butter to bring out sweetness and aroma. Flour is added to form a roux and browned slightly over several minutes to develop a nutty flavor base. Red wine is whisked in gradually, blending into a smooth sauce before adding stock and seasoning with salt, black pepper, and fresh thyme sprigs. The mixture is brought to a low boil, then simmered for 15 minutes to reduce and concentrate flavors. Running the sauce through a fine mesh sieve removes solids for a velvety texture. If the sauce is too thin, a cornstarch slurry can be whisked in to thicken it to desired consistency. This gravy enhances roasted meats, especially poultry or beef, complemented by the acidity and complexity of the red wine.

The notes suggest flexible stock use, including chicken, vegetable, or turkey stock, and recommend using pan drippings from roast poultry to add depth to the gravy, leveraging seasoning from the meat itself.
