Refreshing Watermelon Feta Salad
Description
This salad features seedless watermelon cut into roughly 1-inch cubes paired with crumbled sheep’s milk feta and freshly chopped basil leaves. The contrast between the juicy sweet watermelon and the salty tang of feta creates an appealing flavor combination, while the basil contributes an aromatic freshness.
The dressing blends extra virgin olive oil with fresh lime juice, salt, and freshly ground black pepper, gently tossed into the salad to coat the ingredients without overwhelming them. Serving the salad chilled ensures a crisp, refreshing experience, particularly well suited for warmer weather meals.
Watermelon and feta salad can be prepared shortly before serving or made as a make-ahead dish if consumed within a couple of hours, as extended refrigeration may soften the ingredients. The salad pairs well with grilled proteins or light summer fare. Swapping basil for fresh mint can provide an alternate herbal note to suit different tastes.
Ingredients
- 3 lb watermelon seedless, chilled
- 8 oz feta cheese crumbled – sheep’s milk feta
- ¾ cup basil chopped, fresh
For Dressing-
- ⅓ cup extra virgin olive oil
- 2 lime juice
- salt I added about 1 ½ teaspoon, to taste
- 1 teaspoon black pepper fresh ground
Instructions
- Cut out rind from watermelon. Chop the fruit into 1 inch cubes. Seedless watermelon works best for this salad. If you cannot find seedless watermelon, buy watermelon with seeds and while cutting them into cubes, remove the seeds from it. Remember this is going to be tedious job – removing seeds from watermelon.
- In a small bowl whisk together olive oil, lime juice extracted from fresh lime, salt, pepper. This is the dressing for the salad.
- In a large bowl combine watermelon cubes, crumbled feta and basil leaves. Toss gently until ingredients are combined well. Transfer to serving bowl. Sprinkle few basil leaves on top.
- Drizzle the dressing over the salad. Stir gently to integrate the cheese, dressing into the salad.
- Serve chilled.
Notes
- Use seedless watermelon to simplify preparation and avoid removing seeds.
- Buy feta as a block and crumble or cube it fresh for better texture and flavor.
- Fresh basil can be replaced with fresh mint for a different herbal profile.
- Serve this salad chilled for the best flavor and texture experience.
- Prepare the salad no more than an hour or two before serving to maintain freshness.
- Do not omit the dressing, as it enhances the flavors without overpowering the ingredients.
