  • 1 pound plum Roma tomatoes
  • 1 half white onion medium
  • 2 serrano chile or small jalapeños
  • 1 clove garlic optional
  • 8 cilantro fresh, sprigs
  • 2 tbsp. neutral cooking oil generic cooking oil
  • 1 tsp. salt

Instructions

  1. Remove the seeds and veins from the chiles (Leave them in if you want a hotter salsa)
  2. Roughly chop the tomatoes, onion, chiles, and cilantro
  3. Add the chopped vegetables to your blender (Do not add extra water unless needed and then add a couple of tablespoons at a time)
  4. Add ½ teaspoon salt
  5. Blend the salsa until it has a coarse texture
  6. Preheat 2 tablespoons of oil in a pan
  7. Pour the blended salsa in the hot oil
  8. Bring to a boil and then reduce the heat to low
  9. Simmer for 15 minutes
  10. Adjust the salt

Notes

  • Remove chile seeds for milder heat or leave them in to increase spiciness.
  • Optional additions include garlic clove, lime juice, or a dash of cumin to alter flavor.
  • Use this salsa as a condiment for Mexican dishes or as a fresh dip with chips.
