Reuben Dip

Reuben Dip is a warm, savory baked appetizer that combines softened cream cheese, chopped corned beef, shredded Swiss cheese, sauerkraut, Thousand Island dressing, and sour cream. The mixture is baked until bubbly and optionally broiled for a golden cheese crust. Served hot, it pairs well with cocktail rye bread, crackers, celery, or cucumber for dipping.

Description

This Reuben Dip brings together classic ingredients of a Reuben sandwich in a creamy, spreadable form. The softened cream cheese base is combined with chopped deli corned beef, shredded Swiss cheese for meltiness, drained sauerkraut for tang, and a blend of Thousand Island dressing and sour cream for moisture and flavor balance.

After mixing, the dip is spread in a baking dish and heated in the oven until bubbly, allowing the cheese to melt and the flavors to meld. Optionally, it is broiled briefly to create golden, slightly crisp spots on top, adding texture.

Once baked, the dip is served warm with rye bread cut into squares, crackers, or fresh vegetable sticks for dipping. This warm appetizer offers a rich, tangy, and savory profile reminiscent of the traditional Reuben sandwich but shared in communal style.

Using pre-sliced deli corned beef chopped just before mixing makes preparation straightforward.

Ingredients

Servings
  • 8 ounces cream cheese softened
  • 8 ounces corned beef chopped, deli sliced
  • 1 cup swiss cheese shredded
  • ½ cup sauerkraut well drained
  • 1/4 /4 cup Thousand Island dressing (Russian dressing can be substituted)
  • 1/4 /4 cup sour cream
  • cocktail rye bread bread cut into squares; for dipping
  • Cracker
  • celery
  • cucumber

Instructions

  1. Preheat oven to 400 degrees.
  2. In a large bowl, mix together all the ingredients. If your ingredients aren't soft you can make this easier by microwaving it in 30 second increments. Spread in a pie plate or other baking dish.
  3. Bake for about 15 minutes, or until bubbly around the edges. If you want the cheese to have those golden spots, turn the broiler on for a few minutes at the end. Serve with cocktail rye bread cut into squares, crackers, celery, rye chips, or cucumber slices for dipping.

Notes

  • For convenience, ask the deli to slice the corned beef before chopping it for the dip.
