Description
Reuben Dip takes the signature ingredients of a Reuben sandwich—corned beef, Swiss cheese, sauerkraut, and Thousand Island dressing—and combines them into a creamy, warm dip. The corned beef is diced thinly and mixed with well-drained sauerkraut, shredded Swiss cheese, mayonnaise, and Thousand Island dressing, then seasoned with black pepper. This mixture is baked in an oven-safe dish at 400°F until the dip is bubbly and browned on top, developing a slightly crisp surface while remaining creamy inside. After resting, it’s garnished with fresh green onion slices for a mild pungency. The dip pairs well with sturdy crackers that hold up to its rich texture, making it suitable for gatherings or casual snacking. Baking the mixture spread thinner in multiple dishes offers more browned cheese surface for additional texture and flavor.
Ingredients
- 1 pound corned beef diced, thinly sliced
- 8 ounces swiss cheese shredded
- 1 can sauerkraut drained very well - place in strainer & press out liquid, 14 ounces
- ¾ cup mayonnaise good quality
- ¼ cup Thousand Island dressing
- ½ teaspoon black pepper plus a bit more for over the top, freshly ground
- ¼ cup green onion sliced
Instructions
- Preheat oven to 400°F.
- In a large bowl, stir together corned beef, Swiss cheese, sauerkraut, mayonnaise, Thousand Island dressing, and black pepper.
- Transfer mixture to a wide, oven-safe serving dish (a 10" pie pan works great!) and spread into an even layer. Sprinkle a little bit of freshly ground black pepper over the top.
- Bake for 25 to 30 minutes, or until dip is bubbling and nicely browned.
- Remove from oven and let rest 5 minutes, then sprinkle with sliced green onion. Serve hot - with rye crackers, bagel chips, or your favorite sturdy crackers.
Notes
- This recipe makes a large quantity; splitting it between two pans increases the browned cheese surface for added texture.
