Reuben Dip
Description
This Reuben Dip captures the flavors of the iconic sandwich by blending a creamy mixture of cream cheese, sour cream, and Russian or Thousand Island dressing with sauerkraut and diced corned beef. Swiss and mozzarella cheeses add melted richness and a subtle tang, while optional caraway seeds introduce a hint of aromatic spice. Baking until golden brown ensures a bubbly, scoopable texture.
The dip balances creamy, salty, and tangy notes with the texture contrast of chopped sauerkraut and corned beef pieces. The melting cheeses create a satisfying richness and a golden crust develops on top during baking, adding visual appeal and flavor depth.
Serve warm with rye chips, crackers, or sliced bread, or opt for crisp vegetables for a lower-carb option. It makes a flavorful appetizer or party dish and can be held warm in a slow cooker during serving.
Preparing the dip up to 24 hours ahead is possible; allow extra baking time if refrigerated before baking. Well-drained sauerkraut prevents excess moisture, maintaining the dip's ideal consistency.
Ingredients
- 8 ounces cream cheese softened
- ½ cup sour cream
- ½ cup Russian dressing or thousand island dressing
- 1 ½ cups sauerkraut squeezed dry and chopped
- 1 ½ cups corned beef about 6 ounces, diced
- ½ cup swiss cheese shredded
- ½ cup mozzarella cheese shredded
- ½ teaspoon caraway seeds optional
Topping
- ½ cup mozzarella cheese shredded
- 1 tablespoon parsley chopped, fresh
Instructions
- Preheat oven to 375°F.
- In a medium bowl, using a hand mixer, beat the cream cheese, sour cream, and dressing on medium speed until fluffy.
- Add the sauerkraut, corned beef, swiss cheese, mozzarella cheese, and caraway seeds if using.
- Spread into a 2 qt baking dish.
- Sprinkle cheese and parsley on top. Bake for 18-22 minutes or until cheese is melted and golden brown.
Notes
- Use either leftover cooked corned beef or deli-sliced corned beef, preferably cut thick for texture.
- Drain and squeeze sauerkraut thoroughly to avoid watery dip.
- Use a hand mixer to make the cream cheese mixture extra fluffy for easier scooping and a smooth texture.
- Prepare the dip up to 24 hours ahead; it might require longer baking if refrigerated before baking.
- Serve with rye chips, crackers, or vegetable sticks like cucumbers, carrots, or celery for low-carb options.
- A small slow cooker can be used to keep the dip warm during serving.
