Reuben Dip

Reuben Dip is a warm, creamy appetizer blending softened cream cheese, chopped corned beef, sauerkraut, Swiss cheese, sour cream, and Thousand Island dressing. Baked until bubbly and topped with melted Swiss cheese, it echoes the flavors of a classic Reuben sandwich in a sharable, dip form. The combination offers a savory, tangy, and slightly creamy experience perfect for parties or casual gatherings.

Description

The recipe mixes softened cream cheese with diced corned beef and drained sauerkraut, then combines with shredded Swiss cheese, sour cream, and Thousand Island dressing. The mixture is spread evenly in a baking dish and topped generously with additional shredded Swiss cheese. Baking at a high temperature creates a golden-brown, bubbling cheese topping that seals in the flavors below.

This dip offers a balance of creamy, tangy, and slightly smoky tastes from the corned beef and sauerkraut, with the melted Swiss cheese adding a mild nuttiness. It pairs well with crackers, rye bread, or fresh vegetables for dipping, serving as a flavorful starter or snack reminiscent of the traditional Reuben sandwich flavors in a melted, spreadable form.

Using room-temperature cream cheese ensures even mixing. The choice between cubed or deli-style corned beef depends on availability but both work well. Freshly grated Swiss cheese melts more smoothly than pre-shredded options, improving texture and appearance.

Servings
  • 8 ounces cream cheese softened
  • 1 1/2 cups corned beef diced or chopped
  • 1 1/2 cups swiss cheese shredded

  • 1/2 cup sauerkraut drained

  • cooking spray

Instructions

  • Either cubed or deli-sliced corned beef works; choose based on availability and convenience.
  • Use freshly grated Swiss cheese rather than pre-shredded for better melting texture.
