Reuben Egg Rolls
Description
Reuben Egg Rolls incorporate thin strips of corned beef, Swiss cheese, and well-drained sauerkraut seasoned with caraway seeds and Thousand Island dressing, all rolled inside egg roll wrappers sealed with water. Cooking options include frying, air frying, or baking to achieve a golden, crispy texture. The corned beef is sliced thin for easy rolling, and the sauerkraut is squeezed dry to prevent sogginess. The dressing adds a tangy creaminess both inside the roll and as a dipping sauce on the side.
The egg rolls turn out crisp and warm with a mixture of savory beef, sharp cheese, and the distinctive flavors of sauerkraut and dressing. They can be cooked fresh or prepared in advance and frozen or refrigerated, with instructions for adjusted cooking times. Serving them with remaining Thousand Island dressing complements the flavors well.
This recipe offers flexibility to use an oven, deep fryer, or air fryer, accommodating different kitchen setups and preferences. The method ensures a satisfying crunch and classic Reuben flavor in a handheld form.
Ingredients
- 6 egg roll wrappers
- 6 lices corned beef
- 6 lices swiss cheese cut into 1" strips
- 1 ¼ cups sauerkraut drained and squeezed dry
- 1 teaspoon caraway seeds optional
- 1 cup Thousand Island dressing divided use
- neutral cooking oil for frying or air frying, generic cooking oil
Instructions
- Preheat oil to 375°F or air fryer to 380°F.
- Stack corned beef and cut into thin strips.
- Lay egg roll wrappers with a corner pointed toward you. Divide corned beef, swiss cheese, and sauerkraut over the wrappers. Drizzle each with 1 tablespoon of the dressing and sprinkle with caraway seeds if using.
- Dip your finger in water and run it along the edges of the egg roll wrapper.
- Fold the two sides in and tightly roll the egg roll. Seal the edges.
- If air frying, brush each egg roll with vegetable oil (or spray with cooking spray) and place in a single layer, seam side down. See below for oven or deep fryer instructions.
- Cook 7 minutes. Flip and cook an additional 3-5 minutes or until crispy. Serve with remaining dressing for dipping.
Notes
- To bake, place egg rolls on a greased sheet and bake at 350°F, flipping halfway until browned and crisp.
- Deep frying requires 350°F oil; fry egg rolls turning occasionally for about 4-5 minutes until golden.
- Egg rolls can be made up to two days ahead and refrigerated or frozen; add 2-3 minutes to cooking time when cooking from frozen.
