Description
Reuben Hasselback Potatoes start by slicing medium-sized potatoes thinly almost through to create layers. The potatoes are brushed with oil, salted, and cooked by air frying or baking until tender and crisp. Thin strips of corned beef and Swiss cheese are slipped between the potato slices, then the potatoes are returned to high heat to melt the cheese and crisp the meat edges.
The finished potatoes are topped with tangy sauerkraut and creamy Thousand Island dressing, combining soft, crispy, and savory layers with the characteristic Reuben sandwich flavors. This recipe provides a unique potato-centered twist on the classic deli dish, suitable as a hearty side or main.
Ingredients
Potatoes
- 5 potato medium sized, white or russet
- 5 corned beef or pastrami, cut into strips, slices
- 5 swiss cheese or mozzarella, cut into strips, slices
- neutral cooking oil for cooking, generic cooking oil
- salt for seasoning
- black pepper for seasoning
Toppings
- sauerkraut
- Thousand Island dressing
Instructions
- Preheat Air Fryer or Oven to 350°F.
- Wash and dry potatoes. Using two chopsticks or wooden spoons as a guide, carefully slice thin strips into the potato ¾ of the way through the potato (be careful not to slice fully through the potato). This will create the hasselback.
- Brush the potatoes with oil on both sides. Season with salt and pepper. Add to an Air Fryer tray/basket or oven safe baking tray.
- AIR FRYER COOKING METHODAir Fry potatoes for 30 minutes, brushing potatoes with additional oil halfway through cooking.OVEN COOKING METHODBake potatoes for 1 hour, brushing potatoes with additional oil halfway through cooking.
- Stuff strips of cheese and corned beef in alternating slices in each potato.
- Return potatoes to Air Fryer or Oven and broil for 5 minutes until cheese melts and meat crisps up.
- Top each potato with sauerkraut and Thousand Island dressing and serve. Enjoy!
