Reuben Pizza
Description
The Reuben Pizza begins with a 12-inch prebaked crust brushed generously with melted garlic butter to create a flavorful foundation. Half of the shredded Swiss and mozzarella cheeses are sprinkled over the crust, followed by chopped corned beef and drained sauerkraut which bring the classic deli flavors to the pizza. Additional cheese and optional caraway seeds are layered on top before baking at 400°F until the cheese is golden and melted. Once out of the oven, the pizza is finished with a drizzle of Thousand Island or Russian dressing and topped with sliced dill pickles.
This pizza offers a blend of textures — the crisp garlic butter crust contrasts with the melted cheeses and tender, flavorful corned beef, while the sauerkraut adds moisture and tang. The Thousand Island dressing and pickles provide a creamy, bright counterpoint that echoes the original sandwich's components. It’s a creative way to enjoy familiar flavors in a different format, suitable as a casual dinner or party snack.
If you don't have a prebaked crust, you can prebake a 12-inch pizza dough circle brushed with olive oil until golden. For a twist, Thousand Island dressing may also be applied before baking along with the garlic butter, adding extra moistness and flavor inside the bake.
Ingredients
- 1 prebaked pizza crust 12-inch
- 3 tablespoons garlic butter melted
- ¼ pound corned beef leftover or deli, chopped
- ¾ cup sauerkraut drained and gently squeezed
- ¾ cup swiss cheese shredded
- ¾ cup mozzarella cheese shredded
- ¼ teaspoon caraway seeds optional
- ¼ cup Thousand Island dressing or Russian dressing
- 2 dill pickles sliced
Instructions
- Preheat the oven to 400°F.
- Brush garlic butter generously over the baked pizza crust.
- Sprinkle half the cheese over the pizza crust. Top with corned beef and sauerkraut, followed by the remaining cheese and caraway seeds (optional).
- Bake for 8-12 minutes, or until cheese is melted and golden.
- Top with a drizzle of Thousand Island dressing and sliced pickles and serve.
Notes
- If a prebaked crust is not available, you can prebake pizza dough rolled into a 12-inch circle on parchment at 450°F for 12 to 16 minutes until golden.
- Thousand Island dressing can be applied before or after baking depending on your taste preference; before baking it adds moisture, after baking keeps it fresh.
- Caraway seeds are optional; they provide a subtle anise flavor that complements the sauerkraut and corned beef.
