Reverse Sear Steak (Oven) uses a low temperature oven to gently cook thick ribeye steaks before finishing with a high-heat sear. This method delivers evenly cooked meat with a crusty outer layer and tender, juicy interior, ideal for rich, flavorful steak servings.

Description

This recipe starts by seasoning 1.5 to 2-inch thick ribeye steaks generously with salt and pepper. Placing the steaks on a wire rack over a baking sheet prevents steaming and ensures even heat circulation. The oven is set to 250°F to slowly bring the steaks to internal medium doneness (about 100°F). This gentle cooking avoids overcooking the exterior.

Once the steaks make it to the target temperature, they are transferred to a preheated cast iron skillet with oil for searing. High heat quickly browns the outside, creating a flavorful crust while keeping the interior at the desired doneness due to carryover heat during resting. Resting the steaks for 3 to 5 minutes before slicing allows juices to redistribute for maximum tenderness.

This approach yields steaks with more even cooking from edge to center compared to traditional searing first. It is suited for ribeyes but can apply to other thick cuts.

  • 2 lbs ribeye steak 1.5-2 inch thick, plural
  • 1 tbsp neutral cooking oil olive or avocado, generic cooking oil
  • 2 tbsp salt adjust to preference
  • 2 tsp black pepper adjust to preference, ground

Instructions

  1. Preheat the oven to 250°F. Season the steaks generously with salt and pepper. Place them on a wire rack set on a lined baking sheet.
  2. Bake for about 30-45 minutes for medium doneness. Use a thermometer to check the internal temperature of the steak, it should read 100F.
  3. Just before the steaks come out of the oven, preheat an oiled cast iron skillet over high heat until the oil begins to smoke.
  4. Transfer the steaks into the cast iron skillet with tongs and sear each side until browned, and until it reaches your desired doneness. (keep in mind the temperature will continue to rise as they are resting)
  5. Let steak rest for 3-5 minutes before you cut into them. Enjoy
