Rhubarb Bread

Rhubarb Bread is a moist, lightly sweetened loaf made from brown sugar, vegetable oil, buttermilk, and fresh diced rhubarb. Chopped nuts add texture, while a cinnamon-sugar butter topping forms a crusty finish. Baking in loaf pans produces a tender crumb with a subtle tang from the rhubarb throughout.

Description

This quick bread recipe starts by mixing brown sugar and vegetable oil, then incorporating egg, buttermilk, and vanilla for richness and moisture. Dry ingredients—flour, baking soda, and salt—are sifted together and stirred into the wet ingredients. Finely diced rhubarb and chopped nuts are folded in to distribute bursts of tartness and crunchy texture evenly. The batter is poured into greased loaf pans.

A topping made of sugar, cinnamon, and melted butter is sprinkled over the batter before baking, adding a sweet-spiced crust. Baking at 325°F for around 40 minutes develops a soft interior while preventing overbaking keeps it tender. Cooling the bread on a wire rack after briefly removing it from the pans avoids sogginess.

This bread balances the rhubarb's natural tartness with the sweet topping and brown sugar base. It works well as a breakfast treat or snack alongside tea or coffee.
