Rhubarb Margaritas

Rhubarb Margaritas blend ruby rhubarb syrup with tequila, orange liqueur, lime and orange juices, topped with club soda. The cocktail offers a balance of tartness from rhubarb and lime with the subtle sweetness from orange juice and syrup. Coarse salt rims and garnishes of lime wedges and rhubarb pieces add texture and enhance flavor. This drink works well chilled and is refreshing for social gatherings or casual sipping.

Description

Rhubarb Margaritas combine ruby rhubarb syrup with tequila blanco, orange liqueur, and fresh citrus juices for a unique take on a classic margarita. The ruby rhubarb syrup provides a tangy fruity base that is balanced by the sweetness of fresh orange juice and the warmth of tequila. The coarse salt rim on the glasses adds a contrasting savory note.

Preparation includes chilling the rhubarb syrup mixture, pouring it over ice, topping with chilled club soda, and quickly stirring to blend the denser syrup with the soda. The drink gains brightness from the lime wedge garnish and optional fresh rhubarb, offering a layered taste and crisp texture. Adjusting syrup and lime allows customizing the sweetness or tartness to preference.

These margaritas are ideal for serving in a pitcher for entertaining or individually made at the moment. The chilled syrup and soda keep the drink light yet flavorful. Salt-rimmed glasses and fresh garnishes complete this bright cocktail experience, perfect for warm weather or gatherings that enjoy a slightly tart, refreshing cocktail.

Ingredients

Servings
  • lime for salt rim on glasses and final garnish, wedges
  • salt coarse, for the glass rims
  • 8 ounces ruby rhubarb syrup chilled
  • 6 ounces tequila blanco
  • 1 ounce orange liqueur such as Cointreau
  • 4 ounces lime juice freshly squeezed
  • 4 ounces orange juice freshly squeezed
  • club soda chilled

Instructions

For A Pitcher (4 drinks):

  1. Prep the glasses: Add coarse salt to a small plate. Rub the cut side of a lime wedge around the rim of a glass and dip the glass upside-down into the salt. Repeat with the other 3 glasses.
  2. Make the rhubarb margarita mix: In a small pitcher, combine the Ruby Rhubarb Syrup, tequila, orange liqueur, lime juice, and orange juice, and give it a stir. Use right away or make this up to 2 hours in advance and keep chilled in the fridge.
  3. Make the rhubarb margaritas: Divide rhubarb margarita mixture evenly between the four prepared glasses (or just make 1 at a time), about 6 ounces of margarita mix per glass.
  4. Fill each glass ⅔ full with ice, then top with chilled club soda to almost fill the glass. With a spoon, quickly swirl the drink to incorporate the heavier rhubarb syrup mixture into the club soda.
  5. Squeeze a lime wedge over the top and toss it into the glass. Garnish with fresh cut rhubarb and more lime wedges, if desired.

For 1 Drink:

  2. Make the rhubarb margarita: To the prepared glass, add 2 ounces Ruby Rhubarb syrup, 1½ ounces tequila blanco, ¼ ounce orange liqueur, 1 ounce freshly squeezed lime juice, and 1 ounce freshly squeezed orange juice.
  3. Fill glass ⅔ full with ice, then top with chilled club soda to almost fill the glass. With a spoon, quickly swirl the drink to incorporate the heavier rhubarb syrup mixture into the club soda.
  4. Squeeze a lime wedge over the top and toss it into the glass. Garnish with fresh cut rhubarb and more lime wedges, if desired.

Notes

  • Adjust the sweetness by adding more ruby rhubarb syrup or lime juice according to personal taste.
  • Prepare the margarita mixture up to two hours ahead and keep chilled before serving.
  • Coarse salt rims enhance the flavor contrast and should be applied just before serving to maintain crispness.
