Description
Rhubarb Slush begins by simmering chopped rhubarb in water until softened, then straining the liquid to remove solids. Sugar, lemon juice, strawberry gelatin powder, and pink lemonade concentrate are stirred into the rhubarb liquid to infuse sweetness and tartness alongside the bright pink color from the gelatin and lemonade mix.
Vodka can be added for an alcoholic variant, but it also works well as a non-alcoholic treat. The mixture is frozen overnight to become a thick slush. Before serving, it is stirred to refresh the texture, then scooped into cups and topped with lemon-lime soda to add fizz and balance the tartness.

Ingredients
- 8 cups rhubarb fresh or frozen, chopped
- 8 cups water
- 3 cups sugar granulated white
- ½ cup lemon juice
- 3 ounces strawberry gelatin dessert Jell-O brand
- 12 ounces pink lemonade concentrate frozen
- 2 cups vodka optional
- 2 liter lemon-lime soda
Instructions
- In a large saucepan combine rhubarb and water. Bring to a boil and simmer for 15 minutes or until softened.
- Strain liquid into a large bowl or ice cream pail.
- Add sugar, lemon juice, strawberry Jell-O powder and pink lemonade concentrate to liquid mixture and vodka if desired. Stir until combined.
- Cover the bowl and freeze overnight.
- Remove from the freezer when ready to serve and stir to loosen.
- Scoop into cups and pour the desired amount of lemon lime soda over the top.
Notes
- Store frozen rhubarb slush in an airtight container in the coldest part of the freezer for several months.
- The slush can be made alcoholic with vodka or white rum, or enjoyed alcohol-free.
- Any fruit-flavored gelatin mix can replace the strawberry gelatin for different flavors.
