Description
This recipe uses fresh rhubarb stalks cooked gently with sugar and water until the fruit softens and releases its flavor and color into the liquid. After boiling for about 8 minutes and cooling, the mixture is strained through a fine mesh or cheesecloth to extract a clear syrup, which concentrates rhubarb’s natural tartness.
To serve, the syrup is combined with sparkling water in a ratio that balances sweetness and effervescence, chilled and poured over ice. This produces a fizzy, lightly sweetened soda with a distinct rhubarb tang.
Since rhubarb leaves are toxic, only stalks are used. The syrup can be refrigerated for later use, allowing quick assembly of drinks. Adjust sugar levels or substitute sweeteners depending on dietary preferences or package instructions.

Instructions
- Put the rhubarb and sugar in a non-reactive pot. Add the water and stir to combine.
- Bring to a boil, and then reduce the heat and boil gently for about 8 minutes. The rhubarb will have given up its color and flavor and will be very soft.
- Let the mixture cool to room temperature, then strain through a fine mesh strainer, a jelly bag, or cheesecloth. Push gently to get as much of the juice out as you can.
- Refrigerate the rhubarb syrup until you are ready to make soda.

- Add about 1/3 cup of your chilled syrup to a glass. Top off with 2/3 cup carbonated water. Add ice and enjoy!
Notes
- Use only rhubarb stalks; discard leaves as they are toxic.
- Adjust the sugar amount to taste or substitute with preferred sugar alternatives.
- Keep the syrup refrigerated and use it chilled for best carbonation retention when making sodas.
