Ingredients

  • 3-4 lices chicken breast Click link up above for the recipe, spicy
  • 1 cup sweet potato Click link up above for the recipe, roasted
  • 1 cup vegetables Click link up above for the recipe, roasted
  • ½ cup brown rice cooked
  • ¼ cup black beans cooked
  • 1 tsp olive oil
  • 1 cup kale chopped
  • Pinch crushed red pepper flakes
  • salt to taste, sea salt and freshly cracked
  • black pepper to taste, sea salt and freshly cracked
  • hot sauce if desired

Instructions

  1. Prepare the brown rice in a small saucepan, per instructions.
  2. Heat the olive oil in a large skillet over medium heat. Add the kale, crushed red pepper flakes,  sea salt & freshly cracked pepper, to taste. Cook, stirring often, until wilted, about 3-4 minutes. 
  3. Heat the drained & rinsed black beans until warm.
  4. Spoon the rice into a serving bowl along with some sliced chicken, roasted sweet potatoes & vegetables, black beans, and sautéed kale. Serve with your favorite hot sauce & enjoy.
