Description

This Rice Krispie Treats Recipe uses salted butter melted together with most of the marshmallows to create a smooth, sticky binder. Vanilla extract is added to enhance flavor beyond the sweetness of the marshmallows. The crispy rice cereal is folded in along with the remaining marshmallows to retain some texture variation.

Unlike some recipes that pack the mixture tightly, here the treats are pressed lightly in the pan, avoiding a hard final texture. The mixture sets at room temperature for about an hour before cutting, allowing the bars to hold their shape while remaining chewy and tender.

The treats can be stored in an airtight container for a couple of days and are suitable for freezing. Using fresh marshmallows and pure vanilla extract contributes significantly to the flavor quality. Gentle pressing with fingers dipped in water prevents sticking and maintains the ideal texture.

  • 6 Tablespoons butter salted
  • 16 ounce marshmallows divided, mini, bagged
  • 1 teaspoon vanilla extract pure
  • 6 cups Rice Krispies cereal

Instructions

  1. Line a 9-inch square baking dish with parchment paper. Set aside.
  2. In a large saucepan, melt butter over medium heat. Once melted, add in all but 1 cup of the marshmallows. Reduce heat to low and continue stirring until completely melted.
  3. Remove from heat and stir in the vanilla. Add the cereal and the remaining 1 cup of marshmallows and gently stir until combined.
  4. Pour into the prepared baking dish. Press GENTLY with your fingertips just until completely spread out (the harder you pack them in, the harder they are to eat).
  5. Allow to set, about 1 hour. Cut and enjoy!

Notes

  • Avoid pressing the mixture hard into the pan to keep treats soft and easy to eat.
  • Dip fingers in water before pressing to prevent sticking.
  • Use fresh marshmallows and pure vanilla extract for best flavor.
