Rice Salad with Tuna

This delicious rice salad with tuna is a lunchtime game-changer! It's ideal for meal prep, plus it's packed with chopped vegetables and tossed with lemon vinaigrette.

Ingredients

  • 3 cups brown jasmine rice cooled (see Note 1, or basmati rice, cooked
  • 4 ounce tuna drained and flaked, canned in water
  • ¾ cup cucumber English, chopped
  • ¾ cup tomato chopped
  • ¾ cup bell pepper red, yellow or orange, chopped
  • 1 celery chopped, large stalk
  • 2 green onions thinly sliced (white & green sections)
  • 1 tablespoon capers
  • ¼ cup parsley flat-leaf, minced
  • salt to taste
  • black pepper to taste

The vinaigrette:

  • 2 tablespoons lemon juice fresh
  • 2 teaspoons agave nectar or honey
  • ½ teaspoon oregano dried
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper ground
  • 2 tablespoons extra virgin olive oil

Instructions

  1. In a large bowl, combine the cooled rice, tuna, cucumber, tomatoes, bell pepper, celery, green onions, capers and parsley. Stir to combine.
  2. Pour in the lemon vinaigrette. Stir again to combine. Taste and adjust seasonings to taste. Serve.

The vinaigrette:

  1. In a small bowl, whisk together the lemon juice, agave nectar, oregano, salt and pepper. While whisking, slowing pour in the olive oil
