Ricotta Meatballs
Description
The Ricotta Meatballs recipe blends ground pork with creamy ricotta cheese, grated Parmesan, breadcrumbs, parsley, egg, and optional Worcestershire sauce to bind the mixture and add moisture and flavor. Forming the mixture into meatballs creates tender balls that bake in the oven until golden brown.
The accompanying tomato sauce is prepared by gently frying garlic in olive oil until golden, then simmering crushed San Marzano tomatoes with salt and black pepper to develop a fresh and balanced sauce. The meatballs can be cooked alongside or before adding to the sauce.
These meatballs serve well with any cooked pasta variety, mixing the meatballs, sauce, and pasta before serving. Additional grated Parmesan can be added on top for extra richness. The recipe yields about a dozen medium-sized meatballs suitable for a family meal or batch cooking.
Ingredients
For The Tomato Sauce:
- 2 tablespoons olive oil
- 2 garlic peeled and end removed, cloves
- 28 ounces San Marzano Tomatoes crushed or pureed
- salt
- black pepper
For The Meatballs
- 1 pound ground pork
- ¾ cup ricotta cheese whole milk
- ½ cup Parmesan Cheese fine grated, Parmiggiano spelling variant
- ½ cup bread crumbs
- 1 egg
- 2 tablespoons parsley finely chopped
- Worcestershire sauce Dash (optional)
- salt
- 1 teaspoon black pepper
Instructions
Preparing The Tomato Sauce
- In a saucepan over medium high heat, add the olive oil and the garlic. As soon as the garlic is golden, remove and discard.
- Add the tomatoes, salt and pepper and cook over medium low heat for about 25-30 minutes.
Preparing The Meatballs
- Preheat the oven to 375F.
- Mix all the ingredients by hand or in the KitchenAid mixer with the paddle. Roll out 12 meatballs.
- Place them on greased baking sheet and bake for about 20 minutes or golden brown.
- Can be served alongside any pasta of choice. Cook pasta according to manufacturer directions. Mix the meatballs with the tomato sauce and pasta. Serve hot with freshly grated Parmiggiano cheese over it.
