Riesling-Peach Glazed Ham
Description
This recipe starts with a fully cooked bone-in spiral ham placed on a roasting rack. A glaze is prepared by reducing Riesling wine with fresh thyme and shallots, then stirring in peach preserves, light brown sugar, and stone-ground mustard for a balance of fruity sweetness and subtle spice. Half the glaze is brushed onto the ham before baking at 350°F.
The ham is basted with the remaining glaze every 30 minutes during the 1 hour 30 minutes roasting period, followed by an additional 30 minutes covered loosely with foil until the internal temperature reaches 140°F. This slow roasting allows the glaze to caramelize and soak into the ham’s surface, enhancing its flavor with a bright, fruity finish balanced by mustard’s tang.
The ham rests 15 minutes before slicing, allowing juices to redistribute. This glaze pairs well with traditional side dishes and adds a fresh twist to a classic baked ham served for holidays or special meals.
Ingredients
- 1 ham 6-8 pounds, fully cooked; bone-in; spiral cut; half
- 1 cup Riesling wine
- 2 prigs thyme plus more for garnish if desired, fresh
- 1 shallot finely chopped
- 18 ounces peach preserves
- ½ cup light brown sugar lightly packed
- ½ cup mustard stone-ground
Instructions
- Preheat oven to 350 degrees F.
- Line a shallow roasting pan with foil. Place ham on the rack in the roasting pan.
- Put an ovenproof meat thermometer in the ham so tip is in center of the thickest part of the meat and does not touch bone.
- In a 1-quart saucepan, heat wine, thyme sprigs, and shallot to boiling over medium-high heat.
- Reduce heat and simmer uncovered until the wine is reduced to 1/2 cup.
- Remove from heat and discard thyme sprigs. Stir in peach preserves, brown sugar, and mustard.
- Brush half of glaze mixture over ham.
- Bake ham uncovered 1 hour 30 minutes. Baste ham with remaining glaze mixture every 30 minutes.
- Cover ham loosely with foil, and bake for another 30 minutes, or until thermometer reads 140 degrees F.
- Remove ham from oven and let stand 15 minutes before serving.
