Roast Beef Panini

Filled with roast beef, melty cheese, an easy slaw, and a horseradish mayo, this Roast Beef Panini is a 5 star homemade sandwich! Ready in no time at all, it’s perfect for lunch or for an easy dinner.

Ingredients

Servings

Slaw

  • 3 cups coleslaw mix
  • 4 tablespoons mayonnaise light
  • 2 teaspoons mustard
  • 1/2 teaspoon celery salt

Horseradish Mayo

  • 1/2 cup mayonnaise light
  • 2 tablespoons sun-dried tomatoes minced, oil-packed
  • 1 tablespoon horseradish prepared
  • 1/4 teaspoon garlic powder
  • Pinch red pepper flakes

Sandwiches

  • 8 lices bread
  • red onion thinly sliced
  • 8 oz roast beef thinly sliced, deli style
  • 8 lices Colby-Jack cheese thin-sliced
  • 4 tablespoons butter softened

Instructions

  1. In a bowl, combine the slaw ingredients and mix to combine. Set aside.
  2. In another bowl, mix together the horseradish mayo ingredients. Set aside.
  3. Preheat a panini press or a skillet.
  4. Assemble the sandwiches by laying the slices of bread on a surface. Spread some of the mayo on each slice, then top each with a slice of cheese.
  5. Divide the roast beef into four portions and place a portion on the top of 4 of the slices of bread. Top with the red onions and the slaw.
  6. Place the remaining 4 slices on top to form 4 sandwiches.
  7. Spread the outside of each sandwich with the butter.
  8. If using a panini press, grill one or two sandwiches at a time until the cheese is melted and the sandwich is golden brown. If using a skillet, add the sandwiches and cook until the bread is golden, then flip and cook the second side.
  9. Cut in half to serve.
