Roast Beef Sliders (Hawaiian Rolls)
Description
This recipe assembles sliders using 12-count Hawaiian sweet rolls sliced horizontally but kept as a whole loaf to bake evenly. Thinly sliced roast beef and cheese (such as provolone, sharp cheddar, Havarti, Swiss, or blue cheese) are layered over the bottom buns topped with caramelized onions sautéed in butter and olive oil until soft and browned over 15-30 minutes.
The preparation includes a warm sauce made by melting butter with brown sugar, brown mustard, Worcestershire sauce, garlic powder, onion powder, and thyme. This is brushed over the assembled sliders to create a flavorful glaze that melts the cheese and slightly caramelizes the bottoms during baking at 350°F.
These sliders are suited for parties or casual dinners and can be kept warm in a slow cooker set to low after baking. They store well refrigerated and reheat in the oven. The sandwich is versatile; variations include different cheeses, mustards, or roll types such as brioche or pretzel buns. Poppy or sesame seeds may be added on top before baking if desired.
The recipe suggests freezing assembled sliders for convenience, then reheating slowly to preserve freshness.
Ingredients
Roast Beef Sliders
- 1 package sweet rolls 12 count Hawaiian Bread rolls (see notes for options, King's Hawaiian brand
- 12-18 lices roast beef sliced thin, deli
- 10-12 lices provolone cheese sharp white cheddar, Havarti or Swiss cheese, or blue cheese are all delicious
- 1-2 large sweet onion Sliced thin, use red onions, yellow or sweet onions
- 1 tablespoon olive oil
- 2 tablespoons butter or add sub with additional olive oil, salted
- horseradish optional, regular or beet
Sauce
- ½ cup butter melted
- 2 tablespoons brown sugar
- 1 tablespoon brown mustard or use your favorite, Dijon or yellow mustard, spicy
- 1 tablespoon Worcestershire sauce
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ½ teaspoon thyme dried
Instructions
- Preheat oven to 350° F (175° C) and lightly spray a 9x13 inch baking dish with cooking spray oil.
- Heat skillet over medium heat, adding butter and oil. Saute sliced onions in butter and oil until soft, brown and slightly caramelized, reduce heat to low if necessary. Stirring occasionally, about 15-30 minutes.
- In the meantime, prepare the sliders. Slice the “loaf” of Hawaiian rolls in half lengthwise, with the bottoms slightly thicker than the tops, do not separate individual rolls. If desired, spread with a little prepared horseradish; I skip this step, allowing my eaters to add if they choose.
- Layer roast beef to slider bottoms, then layer cheese over the top of the roast beef, finishing with caramelized/sautéed onions. Cover with tops of bread rolls.
- In a small saucepan, melt butter over medium heat; add brown mustard, brown sugar, Worcestershire sauce, garlic and onion powder, and dried thyme, stirring until the sauce is warmed and the sugars have dissolved. Just a minute or two.
- Evenly pour over the tops of the Hawaiian rolls, if necessary brushing to cover all sides of the sandwiches. Cover with sprayed aluminum foil and bake in a preheated oven for about 20 minutes. Remove foil and bake for 7-10 minutes until tops are lightly browned. Serve immediately or see notes for making ahead.
Notes
- Slice Hawaiian rolls evenly to keep the bottom half slightly thicker for structure.
- Lightly toast the bottom halves before assembling to prevent sogginess and create a flavorful crust.
- Keep sliders warm by wrapping in foil and placing in a slow cooker set to warm for parties or gatherings.
- Store leftovers airtight in the refrigerator and reheat in a 325°F oven for 15-20 minutes.
- Sliders freeze well; thaw in refrigerator before baking, then heat following baking instructions.
- Alternative roll options include slider rolls, brioche, pretzel, or gluten-free buns; ensure rolls are soft.
- Substitute beet horseradish for regular horseradish to add color and flavor; offer on the side for individual preference.
- Optional seeds like poppy or sesame may be sprinkled on top pre-baking for a finishing touch.
