Description
The vegetables are tossed in melted butter, olive oil, and a combination of Italian seasoning, garlic and onion powders, salt, and black pepper before spreading on a baking sheet. Roasting at 400 degrees Fahrenheit for 40 to 45 minutes softens the potatoes and carrots while creating caramelized edges. Parmesan cheese sprinkled over the top melts and browns slightly, adding a savory, umami layer.
After roasting, a garnish of fresh chopped parsley adds a bright, herbaceous contrast to the warm vegetables. This side works well alongside roasted meats, poultry, or as a hearty vegetarian accompaniment.
Ingredients
- 1 lb baby potato cut in half
- 1 lb carrot chopped
- 1 medium onion diced
- 2 tablespoons butter melted
- 2 tablespoons olive oil
- 1 tablespoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon black pepper
- ½ teaspoon salt
- ¼ cup Parmesan Cheese grated
- 2 tablesoons parsley minced
Instructions
- Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper. Place the potatoes, carrots, and onion in a large mixing bowl. Add the butter, olive oil, Italian seasoning, garlic powder, onion powder, salt, and pepper and mix well.
- Transfer the veggies to the baking sheet and spread them out so that they're in a single layer. Sprinkle the parmesan cheese over the top. Bake for 40-45 minutes, until the potatoes and carrots are tender.
- Remove the pan from the oven and parsley. Serve right away.
