Roast Carrots and Potatoes Recipe

This Roast Carrots and Potatoes recipe combines halved baby potatoes, chopped carrots, and diced onion seasoned with Italian herbs, garlic and onion powders, black pepper, salt, and a coating of butter and olive oil. Roasting develops a tender interior with lightly crisped edges, complemented by the nuttiness of melted Parmesan cheese and a fresh parsley finish. The dish offers a savory side with balanced seasoning and texture.

Description

The vegetables are tossed in melted butter, olive oil, and a combination of Italian seasoning, garlic and onion powders, salt, and black pepper before spreading on a baking sheet. Roasting at 400 degrees Fahrenheit for 40 to 45 minutes softens the potatoes and carrots while creating caramelized edges. Parmesan cheese sprinkled over the top melts and browns slightly, adding a savory, umami layer.

After roasting, a garnish of fresh chopped parsley adds a bright, herbaceous contrast to the warm vegetables. This side works well alongside roasted meats, poultry, or as a hearty vegetarian accompaniment.
