Roasted Acorn Squash
Description
In this recipe, acorn squash is halved, deseeded, and sliced into thick pieces. These slices are tossed in a mixture of olive oil, maple syrup, brown sugar, ground cinnamon, salt, and pepper. Roasting at 400°F caramelizes the sugars and softens the squash, yielding tender slices with a sweet and spiced flavor profile.
The combination of maple syrup and brown sugar adds a natural sweetness complemented by the warmth of cinnamon and the savory hint of salt and pepper. The roasting process encourages browning and tender flesh, perfect for fall or winter meals.
This roasted squash can be served immediately as a side dish alongside roasted meats, grains, or hearty salads. The sweetness suits both casual and holiday meals.
Notes suggest selecting ripe squash with a hard, dark green skin and provide instructions for roasting whole halves if preferred, adjusting cook time accordingly. It is also recommended to coat all sides of the squash with the glaze by flipping midway to enhance caramelization.
Ingredients
- 2 1/2 pounds acorn squash
- 2 tablespoons olive oil
- 2 tablespoons maple syrup
- 2 tablespoons brown sugar
- salt to taste
- black pepper to taste
- 1/4 teaspoon ground cinnamon or more to taste
- cooking spray
Instructions
- Preheat the oven to 400 degrees. Halve the acorn squash lengthwise and remove the seeds. Cut the halves into 3/4 inch thick slices.
- Line a sheet pan with foil and coat with cooking spray.
- In a small bowl mix together the olive oil, maple syrup, brown sugar, cinnamon and salt and pepper to taste.
- Pour the olive oil mixture over the squash and toss to coat.
- Bake for 20-25 minutes or until acorn squash is tender and starting to brown. Serve immediately.
Notes
- Choose ripe acorn squash with hard, dark green skin free of shiny spots for better flavor.
- For easier preparation, you may roast whole squash halves, extending baking time until tender.
- Coat all sides of the squash slices with the glaze by flipping halfway through baking to maximize caramelization.
