Roasted Asparagus with Lemon Vinaigrette
Description
Roasted Asparagus with Lemon Vinaigrette begins with seasoned asparagus roasted at high heat until golden and slightly crisp. Tossed simply with olive oil, salt, pepper, and garlic powder, the roasting process caramelizes the vegetable, enhancing its natural flavors.
The lemon chive vinaigrette provides a tangy and herbaceous complement, combining lemon juice, red wine vinegar, Dijon mustard, honey, garlic, and chives emulsified with extra virgin olive oil. Once plated, crumbled feta cheese adds a creamy contrast, and thinly sliced green onions contribute fresh sharpness.
This dish is a bright, flavorful vegetable side that pairs well with chicken, fish, or vegetarian mains. The balance of roasted texture and fresh vinaigrette makes it a versatile accompaniment for year-round meals.
