Roasted Baby Carrots With Honey

Roasted Baby Carrots With Honey feature tender carrots coated in a mixture of olive oil, melted butter, honey, garlic, salt, and pepper, then roasted until soft and caramelized. The gentle roasting enhances the natural sweetness of the carrots complemented by honey, with an optional fresh parsley garnish adding brightness. This side dish is easy to prepare and highlights simple ingredients with harmonious flavors.

Description

This recipe uses baby carrots rinsed and dried before coating them in a blend of olive oil, melted butter, honey, granulated garlic, salt, and black pepper. The honey and butter contribute a glossy finish and mild sweetness, while the garlic adds subtle savory notes. The carrots are spread on a parchment-lined baking sheet and roasted in a 400-degree oven until they become tender when pierced with a fork, typically between 30 to 40 minutes depending on their size.

The roasting process caramelizes the honey and naturally occurring sugars in the carrots, resulting in a soft texture with slightly crisp edges. The combination of butter and olive oil prevents drying out and adds richness. Sprinkling chopped parsley and cracked black pepper before serving adds color and fresh herbal balance.

This dish pairs well with roasted meats or as a flavorful vegetable side for any meal. Serving immediately after roasting ensures the best texture and temperature.
