Roasted Beef with Potatoes and Carrots
Description
Roasted Beef with Potatoes and Carrots features a sizable cut of beef browned and baked atop a bed of diced Yukon potatoes, carrots, and onions seasoned with salt, pepper, and bay leaves. The vegetables develop a tender texture during baking, infused with the subtle smokiness of bacon bits scattered on top. After about an hour in the oven at 350°F, the beef is shredded with forks, yielding a flavorful and hearty dish where the meat juices mingle with the cooked vegetables. The combination of root vegetables and beef makes for a satisfying and practical meal suited to cooler days or when a comforting dinner is desired.
