Roasted Beetroot and Broccoli Salad

A roasted beet broccoli salad that's so filled with flavour, you'll be asked to make it again and again.

Ingredients

Servings

For the Salad

  • 3 cups broccoli bite-sized pieces, florets
  • 3 cups beets bite-sized pieces, cubed
  • 1.5 cups chickpeas cooked or canned (approx. 15-ounce can)
  • 3 tablespoons dried cranberries

For the Dressing

  • 3 tablespoons tahini
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons maple syrup
  • ½ teaspoon garlic powder
  • ½ teaspoon ground ginger
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat the oven to 425℉/218℃ and line a large baking sheet with parchment paper.
  2. Chop your broccoli into small florets and peel and cube the beets into small half-inch pieces. Arrange the chopped veggies and chickpeas in a single layer on a baking sheet and sprinkle with salt and black pepper. Bake for 25-30 minutes, until the beets are fork tender. Remove the tray from the oven and allow the veggies to cool slightly.
  3. Meanwhile, add the dressing ingredients to a small bowl, whisking to combine well.
  4. Add the roasted beets, broccoli, chickpeas, dried cranberries and the dressing to a medium/large bowl and stir until everything is evenly coated. Enjoy your beet broccoli salad when freshly made for the best textures.

Notes

  • Chop the beets small for quicker cooking. Or if you’re having trouble cutting them small enough, give them a 15 minute baking headstart, and then add the broccoli and chickpeas to the tray.
  • Taste and adjust the salad dressing to your taste before tossing.
