Description
This Roasted Beets recipe is straightforward: fresh beets are washed, trimmed, halved, and coated lightly with olive oil, salt, and black pepper. Wrapped in foil with a parchment layer, the beets roast evenly at 375°F for about an hour until fork-tender. Roasting softens the beets and enhances their natural sweetness and earthiness.
Once cool enough to handle, the beet skins are rubbed off easily with gloves or towels, leaving bright, smooth beet flesh. They can be served warm, perhaps with a pat of butter, or chilled and incorporated into salads.
The simple seasoning allows the beets’ natural flavors to shine, while the roasting method delivers soft yet firm texture and a subtly caramelized finish.
Store leftover roasted beets covered in the refrigerator for up to one week or freeze for longer storage. Roasting in foil helps retain moisture for tender results every time.
Ingredients
- 6 beet or as many as desired
- 1 tablespoon olive oil about 1 tablespoon for every 4-6 beets
- salt to taste
- black pepper to taste
Instructions
- Preheat oven to 375°F.
- Wash beets under cold water and cut off the top and bottom. Cut beets in half and toss with olive oil, salt & pepper.
- Lay out a large piece of aluminum foil, top it with a piece of parchment paper. Wrap and seal beets. (Or place beets in a greased baking dish and cover).
- Roast the foil package for 1 hour or until beets are tender when poked with a fork.
- Using rubber gloves or paper towels, rub the beets and the skins will just slide right off.
- Serve warm with butter or chilled in salads.
Notes
- Once cooked and peeled, store roasted beets in an airtight container in the refrigerator for up to 7 days.
- For longer storage, beets can be frozen for up to 6 months.
