  • 4 cups broccoli bite sized, florets
  • 4 cups cauliflower bite sized, florets
  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • ½ cup Parmesan Cheese shredded
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat oven to 450°F.
  2. Wash broccoli and cauliflower. Dry thoroughly.
  3. Toss with olive oil and garlic. Add cheese and using your hands, massage the cheese into the crevices of the vegetables. Season with salt & pepper to taste.
  4. Roast 10 minutes, stir and roast an additional 5-10 minutes or until vegetables are tender crisp.

Notes

  • Ensure broccoli and cauliflower are thoroughly dried to avoid steaming during roasting.
  • Frozen vegetables can be used but should be roasted longer, then finished under the broiler for color.
