Roasted Brussels Sprouts Recipe

This Roasted Brussels Sprouts recipe features halved sprouts coated in olive oil, Parmesan cheese, and seasonings, then roasted until tender with crispy edges. A homemade balsamic glaze with honey and garlic powder adds a sweet tangy finish. This combination offers a balance of savory, nutty, and slightly sweet flavors and textures.

Description

This recipe uses fresh Brussels sprouts cut in half and coated with olive oil, salt, black pepper, garlic powder, and grated Parmesan to enhance natural flavors and promote caramelization during roasting. Cooking at 450°F for 15-20 minutes softens the sprouts and creates crisp, golden edges. The preparation ensures the sprouts cook evenly and develop a satisfying texture.

The balsamic glaze is made by reducing balsamic vinegar until thickened, then whisking in honey, garlic powder, and salt, balancing sweetness with tang and gentle savory notes. Drizzled over the roasted sprouts just before serving, it adds a glossy finish and complements the savory roast.

This side dish works well with roasted meats or as part of a vegetable-focused meal. The glaze can be prepared ahead and stored refrigerated for up to five days, reheated slightly before drizzling.

Ingredients

Servings
  • 24 ounces Brussels sprouts 1.5 pounds, fresh
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • cup Parmesan Cheese the kind that comes in the shaker, grated

Balsamic Glaze

  • 1 cup balsamic vinegar
  • 4 tablespoons honey
  • ¼ teaspoon salt
  • ¼ teaspoon garlic powder

Instructions

  1. Preheat oven to 450 degrees and grease a large baking sheet. Cut Brussels sprouts in half lengthwise and place in a large bowl with olive oil, toss to coat.
  2. Sprinkle on top salt, pepper, garlic powder, and parmesan cheese, stir well to combine. Transfer to prepared baking sheet and turn all of the Brussels sprouts over so that they are flat-side down. Bake for 15-20 minutes until fork-tender.
  3. While Brussels sprouts are cooking, prepare the balsamic glaze. Add balsamic vinegar to a medium sauce pan. Bring to a boil over medium-high heat and boil for 6-8 minutes until reduced to half the original volume. Remove from heat, stir in honey, garlic powder, and salt. Transfer to a bowl and allow to cool, when ready to serve drizzle over Brussels sprouts.

Notes

  • The balsamic glaze can be prepared up to 5 days in advance and chilled until needed; reheat briefly before serving for best texture.
