Roasted Brussels Sprouts with Sriracha & Honey

Roasted Brussels Sprouts with Sriracha & Honey use thinly sliced sprouts tossed with garlic, olive oil, and salt, then coated in a honey-sriracha-chili oil sauce before roasting at high heat. The result is a dish with crisped edges, a sweet-spicy glaze, and savory notes from garlic and chili oil. It offers layered flavors and a balance of textures.

Description

This recipe begins by cleaning Brussels sprouts and slicing them thinly, which increases surface area and allows faster roasting and more crispiness. Fresh garlic is added to bring pungency and aroma. The sprouts are drizzled with olive oil and lightly salted, then combined with a prepared sauce of honey for sweetness, sriracha for heat, and chili oil for additional spice and richness.

The coated Brussels sprouts are spread evenly on a sheet pan and roasted at a high temperature (450°F/230°C) for 15-20 minutes, which caramelizes the vegetables and crisps their outer leaves. If desired, a final broiling step crisps them further. An optional extra drizzle of chili oil finishes the dish, enhancing the spiciness and gloss.

This side or snack offers heat tempered by honey’s sweetness, with garlic’s savory notes and the crunch of roasted sprouts. It pairs well with a variety of meals needing a flavorful vegetable component or stands on its own as a spicy, sweet roasted vegetable dish.

Ingredients

Servings
  • 2 pounds Brussels sprouts
  • 3 cloves garlic (ends trimmed)
  • 1 tablespoon olive oil
  • salt (to taste)
  • 3 tablespoons honey
  • 2 tablespoons sriracha (or to taste)
  • 3 tablespoons Chili oil (or to taste)

Instructions

  1. Clean the brussels sprouts by soaking them in cold water. Using the slicing attachment of the food processor, slice the brussel sprouts into thin rounds. If you don’t have a food processor, you can do this by hand with a sharp knife.
  2. Transfer the brussels sprouts and chopped garlic to a sheet pan. Drizzle with olive oil and season with salt to taste. There’s salt in the sriracha, so don’t go overboard.
  3. In a small bowl, combine the honey, sriracha, and chili oil. You can adjust the amounts to taste if you like your food more or less spicy. Toss the brussels sprouts with the sauce and spread in a single layer.
  4. Roast at 450°F/230°C for 15-20 minutes, finishing them under the broiler for 1-2 minutes if they need crisping further. Finish with another drizzle of chili oil (optional), and serve!
